Gir Cow Ghee from the Jasdan herd – made the way it was made 300 years ago

Goseva Gir Cow Ghee is A2 bilona ghee made at our own gaushala, Gokripa Products – Shivraj Vadi, Jasdan (Rajkot), from the milk of our own 250 Gir cows. The cows are hand-milked, the curd is churned with a wooden bilona, and the makkhan is cooked slowly over a fire of dried Gir cow-dung cakes – under the personal supervision of co-founder Shri Ghanshyam Das. It takes about 30 litres of milk to make 1 litre of this ghee. Every batch is filtered through cloth, bottled in glass, and tested at an NABL-accredited laboratory every three months.

The herd itself is the reason this ghee tastes the way it does: it descends from the Jasdan Gir bloodline, which the Khachar family of Jasdan has bred pure since 1665 and which Goseva founder Shri Satyajit Kumar Khachar, 11th Darbar of Jasdan, has taken to breeders across India and Brazil.

Why this ghee is different |

1. The milk comes from a herd with a name

Most “Gir ghee” sold online is made from milk collected from many small farms, often from mixed breeds, by a dairy that has never seen the cows. Goseva ghee is different for one simple reason: we own the cows. Our herd of around 250 Gir cows grazes on 1,300 bigha at Shivraj Vadi and descends from the Jasdan bloodline – the herd that the Khachar family of Jasdan has kept pure, without cross-breeding, since 1665. Shri Satyajit Kumar Khachar is regarded as one of the finest Gir breeders in India; embryos from this bloodline helped build Brazil’s multi-million Gir (“Gyr”) dairy herd, and Jasdan cows have won 14 national milk-yield championships.

Breed purity decides the A2 beta-casein profile of the milk. Fodder and free grazing decide the colour, the grain and the aroma of the ghee. Because we control all three, every jar is traceable to our own cows – and we can publish a lab report for it.

2. The cows graze on medicinal herbs

Our cows are not stall-fed on bought feed. They graze freely on the Shivraj Vadi land, where Shatavari, Ashwagandha, Jivanti, Jinjva and many other wild herbs and grasses grow naturally. In Ayurveda, what the cow eats is believed to pass into the milk and the ghee – it is one reason why free-grazing desi cow ghee has always been valued above dairy ghee. You can taste the difference in the aroma: slightly herbal, never flat.

3. Cooked on cow-dung fire, not on a gas burner

This is the step almost no commercial ghee maker does any more. After churning, the makkhan is heated slowly over a fire of dried Gir cow-dung cakes (gobar ke kande). The heat is low and even, the way a village hearth works, so the ghee develops its golden colour and grainy texture without scorching. Every batch is cooked under the supervision of Shri Ghanshyam Das, who has been making Panchagavya at the gaushala since before Goseva was founded.

4. 30 litres of milk in every litre

Bilona ghee starts from curd, not cream. The milk is boiled, set into curd with the previous day’s culture, and the whole curd is churned to separate makkhan. That is why it takes about 30 litres of milk to make 1 litre of ghee, and far more time than a cream-separator plant needs. It is also why the ghee tastes richer and costs more than dairy ghee.

Illustration of the traditional bilona ghee-making process

How we make it, step by step |

  1. Hand milking – morning and evening, by hand, at Shivraj Vadi.
  2. Boiling and setting curd – milk is boiled, cooled, and set with the previous day’s culture.
  3. Bilona churning – the curd is churned with a wooden bilona (mathani) to bring up the makkhan.
  4. Slow cooking on cow-dung fire – the makkhan is heated gently on dried cow-dung cakes until the water evaporates and the ghee turns golden.
  5. Cloth filtering – the ghee is filtered through clean cloth and rested before bottling.
  6. Glass jars, batch number, date – filled in glass, labelled with batch number and manufacturing date; shelf life 9 months.

Lab-tested every three months |

Every quarter we send ghee samples to an NABL-accredited laboratory for a heavy-metal test and the full FSSAI ghee specification. The April 2026 report for a 500 ml sample from batch CG 1413 is published here: view the April 2026 lab report (PDF). The sample conformed on all 28 parameters.

Test Result FSSAI limit What it means
Milk fat 99.87% min 99.5% Pure milk fat, almost no water
Moisture 0.13% max 0.5% Low moisture helps shelf life
Free fatty acids (as oleic) 0.79% max 2.0% Fresh, not rancid
Reichert-Meissl value 28.93 min 24.0 Typical of genuine cow-milk fat
Baudouin test Negative Negative No vanaspati or hydrogenated oil
Beta-sitosterol Absent Absent No vegetable oil mixed in
Butyric acid (C4:0) 2.54% 1–5% Natural milk-fat profile
Lead 0.09 mg/kg max 2.5 Far below the limit
Arsenic, cadmium, mercury Below detection limit max 1.1 / 1.5 / 1.0 Not detected
Copper 3.02 mg/kg max 30 Far below the limit

How to read a ghee report: the Reichert-Meissl value is high only in genuine milk fat; the Baudouin test turns positive if vanaspati is mixed in; beta-sitosterol appears only if vegetable oil is present. Together, these three catch almost every common ghee adulteration. A report applies to the sample tested; the batch number of your jar is printed on the label.

Frequently asked questions |

Is this A2 ghee? How do you know?

Gir is an indigenous Indian breed whose milk naturally carries the A2 type of beta-casein. Goseva ghee is made only from the milk of our own Gir cows at Shivraj Vadi – no milk is bought in – so there is no A1 milk in the chain.

What is bilona ghee and why does it cost more?

Regular ghee is made by separating cream from milk in a machine and heating it. Bilona ghee is made from curd: the curd is hand-churned with a wooden bilona to get makkhan, and the makkhan is cooked slowly – here, on cow-dung fire. It takes about 30 litres of milk and far more time per litre, which is why it costs more and tastes different.

Why does the cow-dung fire matter?

Dried cow-dung cakes give a low, even heat, like a traditional village hearth, so the makkhan cooks slowly without scorching. It is the way ghee was made before gas burners, and it is part of why the ghee is grainy and golden rather than smooth and pale.

Why is the colour or texture different from my last jar?

Gir cow ghee is naturally golden and grainy and turns semi-solid in winter. Colour, aroma and graininess vary a little with the season, the herbs the cows have grazed, and the batch, because nothing is added to standardise them.

How often is the ghee tested?

Every three months, at an NABL-accredited laboratory, for heavy metals and the full FSSAI ghee specification. The April 2026 report is published on this page; a report applies to the sample tested, and your jar carries its own batch number.

Does it contain lactose or casein?

Milk solids are removed during ghee-making, so only trace amounts remain. Many lactose-intolerant people tolerate ghee well, but if you have a diagnosed milk allergy, please consult your doctor first.

Can I use this ghee on a keto or low-carb diet?

Yes. Ghee is almost pure fat with no carbohydrates, so it fits keto, paleo and low-carb diets.

Is the ghee made from the same cows shown in your videos?

Yes. The cows in our YouTube videos and on the About page are the Shivraj Vadi herd, and this ghee is made from their milk.

How much ghee is normal in a day?

For most adults, one to two teaspoons a day with meals is the usual household amount. For children, pregnancy, or any health condition, ask your Vaidya or doctor.

What is the shelf life, and where is the date?

Nine months from the manufacturing date. The date and batch number are printed on the label.

How should I store it?

At room temperature with the lid closed, away from sunlight, using a clean, dry spoon. It does not need refrigeration.

Do you ship outside India?

Yes. Enter your delivery country at checkout to see the available shipping and payment options.

Do you supply bulk, temples or corporate gifting?

Yes. We supply B2B bulk orders, temple and gaushala supply, and corporate gifting. The 10-bottle pack and the 5 L dolchi are made for this; for larger quantities or custom packing, message us on WhatsApp at +91-76984 89555.

Can I visit the gaushala?

Yes, visitors are welcome at Shivraj Vadi, Jasdan (Rajkot). You can see the Gir herd and the ghee-making. Please message us on WhatsApp a day in advance so someone is there to show you around.

What is your return and replacement policy?

As a food product, opened jars cannot be returned. If a jar arrives damaged, leaking or incorrect, send us photos on WhatsApp within 7 days of delivery and we will replace it. See the returns and refunds policy for details.

Is Goseva FSSAI licensed?

Yes. FSSAI Central License No. 10716019000270, M/S. Gokripa Products, Jasdan.
